The Recipe 📝
- 1 1/2 cups | 285g dried red lentils
- 1 large shallot
- 2 garlic cloves
- 1 small carrot
- 15g | 1/4 cup chopped fresh parsley
- 1 tbsp tomato puree
- 1 tsp salt
- 1/2 tsp black pepper
- Olive oil
- Soak 1 1/2 cups (285g) of dried red lentils in enough water to cover them by about 2 inches for two hours.
- Add the drained lentils to a food processor.
- Chop 1 large shallot and add it to the food processor.
- Mince 2 cloves of garlic and add them to the food processor.
- Grate 1 small carrot and add it to the food processor.
- Add 15g (1/4 cup) of chopped fresh parsley.
- Add 1 tbsp of tomato puree.
- Add 1 tsp of salt and 1/2 tsp of black pepper.
- Blend the ingredients until well combined. The mixture will be sticky, but that’s normal.
- Heat some olive oil in a non-stick pan.
- Scoop out a quarter cup of the mixture at a time and shape it into patties about 1/2 inch thick.
- Cook the patties for about 3 minutes on each side or until they are golden brown and crispy.
- Transfer the patties to a plate lined with a paper towel to drain any excess oil, let them cool, and enjoy!
