Mostly found in the dry states of Rajasthan and Gujarat, Gunde ka Achaar is pretty famous in that region.

After processing the gunde in the right way by washing and wiping them dry carefully to take out the natural glue, it gets added to the raw mango pieces and marinated with salt and turmeric powder. It further gets treated with mustard seeds, fenugreek seeds, Kashmiri red chilli powder, Reshampatti chilli powder, asafetida, and peppercorns tempered in mustard oil.
