The very mention of achaar triggers a physical response — lips puckering at the recall of brine and teeth teetering on tanginess — but also a plethora of memories: of courtyards filled with a gaggle of women, exchanging gossip and news over heaps of raw mangoes, lemons, pickling vegetables, chillies, of running across the terrace as a child and slyly picking up a pale yellow slice, left out to dry. Pickles can liven up a meal of hot rice, steaming paranthas or just plain bread.. And if it is homemade with love without preservatives, even better!

Aam ka sookha achar or sookha aam ka achar, raw mango pickle or aam ka achar, as you may call it, is undoubtedly the most popular pickle among the huge variety of pickles made all over India. Every region have their own special recipe of making pickles and even every family have their own favorite or special recipes which are often guarded secretly.
This dry mango pickle or sookha ambi as it is called in my family is my grandmother’s recipe and then my mom learnt it from her and used to make a hug barni/jar during summers. I still remember my childhood days when me and my siblings took this aam ka sookha achar with pooris in our lunch boxes and shared it with our friends and whoever tasted it became a fan of this pickle .

The specialty of this Aam ka sookha achar is its low oil content, as it is made with minimal oil, so no spilling of oil in plate or lunchboxes, it taste awesome and has a long shelf life.
Come summer ( done some months ago ) and a host of activities occupy , with the focus on sunlight and seasonal preparations which last the upcoming monsoons and also beyond .

These methods of tapping and using sunlight to cook up and preserve is most suited to consumption – being a natural preservative , the slow cooking , lesser exposure to sudden heating on a gas flame – retains the natural flavour , increases bio-availability and importantly , retains nutrition .
Homemade Mango Pickle made from selected fresh green Ramkela mangoes and finest ingredients and handcrafted to perfection. Ramkela is a mango variety grown in Uttar Pradesh for pickling purpose only. It has a unique aroma and flavour.
