After the overwhelming response to the Bedmi Poori Mix, I planned to share another classic from the streets of Delhi and something which is very very close to my heart, Bhatura Mix. Now you can relish those Dilli wale chole bhature at the comfort of your home.

While studying engineering in Bangalore, one thing which I missed there the most in terms of food, was our Dilli ka Street Food, specially chole bhature, poori chole, chur chur naan, chaats, etc. Once. during the holidays, when I was visiting Delhi the first thing I did as soon as I got out of the airport was going to eat chole bhature. While eating, an idea clicked, “it’s not rocket science to make it at home”. Took some tips from the halwai who was making those perfect oval puffed bhaturas. Well, it wasn’t that easy after all. I failed a few times before I could get the right ratio of flour to semolina and to the leavening agents. Made a lot of different batches with different ratios of ingredients, different wet ingredients, different resting times, a lot of effort (exercising after eating those trial bhaturas) went into this experiment and at the end, a perfect Bhatura was achieved. Since then, my Sundays became more cheerful with our chole bhature breakfast.

This bhatura mix is made with all-purpose flour which I get ground freshly at our local flour mill. Small amounts of semolina and sugar are added to get that perfect bhatura texture and caramelization while frying. This mix is made in very small batches to yield the best quality mix every single time.

Direction to use:
Two measuring cups of this mix, add 3/4 measuring cup of regular curd/yogurt. Mix gently with fingers to combine and add 1 tbsp of oil and knead a soft dough. Cover and rest it for at least an hour. Apply some oil on the rolling pin, your hands, and the working surface. Take small dough balls, roll the dough to medium thin in an oval shape and fry in hot oil.

Note: Salt is already added, add more after tasting if required. This pack will yield about 12-15 Bhaturas depending on the thickness.

All-purpose flour (maida), semolina, sugar, baking powder, baking soda, and salt.
