Our childhood memories are most relatable to those things that were colorful and delicious. And one such thing that made our winters delightful was Kanji. Little did we know then how healthy it was, but used to gulp it down just because it was a glass filled with a bright and flavourful drink. Kanji is a North Indian fermented drink that is too delicious to be called a health drink. But yes, it is!

Traditionally, this fermented drink was consumed not only due to its taste but also because of the live microbes present in it. These microbes, collectively called the microbiome, helps regulate intestinal and bowel conditions such as ulcerative colitis, protects against immune disorders such as allergies, type 1 diabetes, and other metabolic diseases. But in these modern days, we do not have time to follow the process of fermentation and mostly rely on processed foods. Therefore, to bring back such necessary nutrition in your daily diet, we cooked up the age-old recipe of Vegetable Kanji.

This seasonal veggies paani achaar is made in the winters and is considered as an appetizer with a sour, spicy, and pungent taste.

Made by blanching fresh seasonal vegetables such as carrots, red radish, radish, green chilies, yam, and potato, Vegetable Kanji has salt, black salt, red chili powder, turmeric, and hing added to it for the perfect taste. Also, the presence of mustard powder in it gives your body the warmth needed in the cold winters. After adding water to the mixture, it is then kept in a glass jar and allowed to ferment in the sun for 3-4 days.

You can use this probiotic drink as a welcome drink for your guests or serve it with meals.
