When people gathered around the carts serving Shakarkandi (sweet potatoes) loaded with chaat masala and neembu, my eyes always looked for that green, star shaped fruit, aka Kamrakh, which was also, usually, served on the same cart. A bite of sweet khakarkandi followed by a bite of this sour and chatpata fruit. Aaah, love it so much 🙂

Starfruit still has a bite to it making it texturally perfect when coated with spices and oil. If you like your pickle to be a little matured, just place the jar in sun for couple of more days.
