Though a very traditional Indian pickle recipe, not many are aware of the procedure and ingredients that go in bharwan aam Karela pickle. When a well-processed bunch of super fresh young Karelas get filled with tangy and spicy raw Ram Kela mango and pickled with mustard oil, it creates this aromatic achar, the flavour of which is hard to forget.
This season, I hoarded some young fresh Karelas right from Chhattisgarh and thought of putting it to the right use. So after cleaning and drying it properly, I deseeded them to keep the level of crunch n slight bitterness comfortable. Next, instead of mixing it normally with raw chopped mangoes, I grated some fresh raw Ram Kela mango, mixed it with some handpicked, sundried, roasted and home blend spices, and stuffed the whole Karelas with the mango mixture. The concoction of spices with mustard oil and tangy mango oozes out a sharp and peppery flavour, turning every nibble of your meal into a flavour bomb.
As you bite through the firm and fleshy layer of the karela, your taste buds will get stunned with the pungent grated raw mango mixed with spices with a very distinctive essence, adding on the goodness of raw mango.
