Panjiri – the word itself evokes images of Nanimas and Dadimas, labouring over kadhais, measuring out ingredients, sniffing at a particular one, and shooing you out of the kitchen. Panjiri is love – the winter love that a grandmother or mother bestows upon a child, the feminine love that propels a mother-in-law to make it for her daughter-in-law who has just delivered a baby, the love for good food that leads most of us into the kitchen on a cold, winter night, spoon in hand, searching for that tin that’ll satisfy our craving for something sweet without piling on the guilt and bad calories.

Directions to use:
It is ready to eat if you like it at room temperature. In case you want to warm it up, take out the panjiri and heat in a heavy bottom or non stick pan over the lowest flame continuously stirring it. Do not microwave.
